Marinated Salmon Steaks

4 salmon steaks, cut about 2.5cm thick

For the marinade:
3 tbsp dry white wine 100ml soy sauce
2 tbsp unrefined light brown sugar
1 small onion, grated
1 small garlic clove, crushed
1/2 tsp hot pepper sauce
1/2 tsp freshly ground black pepper


Combine all the marinade ingredients in a bowl. Place the fish steaks in a dish and pour the marinade over.

Cover and refrigerate for 30 minutes, then leave to stand at room temperature for a further 30 minutes before cooking.

If using pre-soaked wood chips or other flavourings, sprinkle them over the hot coals or lava rocks. Oil the barbecue grill and cook the salmon over hot coals, basting with the marinade, for about 5 minutes on each side, or until lightly charred. Serve immediately.
